This recipe is pretty similar to the one found on Delia-online.co.uk, although I’ve made sure that you can get all the ingredients in your local Lidl. Cripes, if you haven’t tried the Lidl bread mix you are missing a treat!
Ingredients:
* Pack of Lidl leeks
* 2 medium lidl organic potatoes
* One onion, chopped
* 1 litre vegetable stock
* 175ml milk
For the croutons
* Any lidl bread would work, but I make mine from the Lidl-own “Landgut” bread mix
Method:
* Wash and chop leeks and potatoes
* Chop onion, add all vegetables to pan
* Caramelise for around 15 minutes
* Add stock and milk, simmer for 20 minutes
* Cool and blend
* 15 minutes before serving, cut the bread into crouton size pieces (big ones are yummiest)
* Cover in olive oil and bake at 180c for 15 minutes
* Reheat soup if necessary and serve with hot croutons, decorate with some chives and cream
